    Interesting. Both of those Yoshikane knives appear to bear kanji with which I am not familiar. Of course, Yoshikane produces many knives for wholesalers and the like, but yours seem to bear neither Yoshikane nor Hatsukokoro kanji. So I have to ask: What outfit sold you those Yoshikanes?

    No, it is the right size. The problem is that it does not have enough slots. With a couple minor tweaks, they could have fit 8-10 more slots into that block.

    Although Osmo Polyx is impeccable for certain tasks (I won't use anything else to finish handles), I would not put it on a cutting board. Instead, I'd use another product from the same maker--namely, Osmo TopOil. TopOil is food safe.

    Debado 180/200 is pretty good. Makes reprofiling and chip repair a cinch. Drawbacks are that it is very friable, so it makes a lot of mess and requires frequent flattening. Really extreme low spots, especially on stainless, seem to stump the debado just like they do most stones.

    That may well be the case. Fortunately or unfortunately, I cannot, and probably never will be able to, confirm or refute that possibility, because someone apparently purchased the cleaver.
