Just curios about the Toyama - was the knife just sharpened or also thinned? I am asking as it is 'only' 51mm tall, but the photos do not look like the knife had some heavy use.

most of the toyama ive seen are around 55 at the heel- how much use has this had, interested if it started out at 51 but not if it was originally 54 or 55!
 
Was the Toyama sharpened or thinned? What was the knife's original height?
 
I’m not sure what height it came with when first got it , but it has been thinned once and sharpened.

It’s shocking and sad to see the munetoshi honyaki stick around for this long. I would of jump on it if I didn’t have one already. Using this knife has been a great experience, 490 for a honyaki, you go nothing to lose ppl. o_Oo_Oo_O


My feedback on my mune honyaki gyuto after few weeks of usage:
1. The Steel and heat treat was top notch, feels great when draw and push cuts, chopping was ok, not the best due to the heel height (around 49mm to 50mm).
2. The edge retention was fantastic, I been cooking (home environment) for few weeks now never had to touch it up on anything.
3. The Hamon was beautiful and far enough from the edge to anyone who might concern.
