Up for sale today is a beautiful 187mm gyuto made of Z Wear from Dan Bidinger. I bought this direct from Dan in May and have really enjoyed using it since, only having been lightly touched up on my Aizu.

I have another Bidinger gyuto up for sale as well, and whichever sells first I plan to withdraw the other.

I paid a hair over $620 after shipping and fees, and am looking for $590 to pass it along.

“A small belt finish gyuto in Z-wear with thin convex geometry focused on ease of cutting. Z-wear is a powdered metal steel that has an excellent balance of toughness and edge retention similar to Magnacut. It’s not a fully stainless steel but will resist corrosion better than any simple carbon steel.”
