Hi KKF,
Trying to shake loose a Yanick or Rader gyuto around 230mm & +55mm heel height.
Let's have some fun. Wanted to see if a pair of knives might be enticing to anyone out there -
First up is a Tsourkan combo of 240 WH gyuto and 180 petty. These two alone could cover almost every task you'll need in the kitchen. Both in 52100 and have great edge retention. The 240 WH has been my best all around knife for some time. Great combo of WH grind that still goes right through sweet potatoes. The 180 is fantastic as well. Not looking to sell either at this time, only trades.
Specs:
240 WH - 52100, 242x55, 239g
180 petty - A2, 174x44, 155g
Second pair comes from the sharpest feather around, Mr. Kippington. The hook grind is his original hook grind sold. Such a cool combo because it didn't yet have his high level of fit and finish, but the blade/grind was going places. Food release is better than takeda and this knife can handle more than you would expect with it in hand. Second blade in the combo is a 230x55mm workpony I bought directly from Kip here on the site a while ago. Right up there with the Marko above for best all around. For my rankings the deciding factor came down to I enjoyed sharpening the Marko more, on the board performance was nearly equal.
Specs:
Hook Grind - 52100, 222x50, 148g
Workpony - 52100, 228x57, 222g
