Catch and release custom from Bjorn. Cut a single potato to test the grind, no patina though. Unsharpened, basically brand new. His bevel finish has definitely improved since the last time I had one.

I used my Birgersson 225 this weekend. Just a small job with onions, shallots, and Brussels sprouts - very impressive performance and worth every penny.
 
I haven’t had an opportunity to try the D/BB knives but as I recall Birgersson did the forging and Dalman did the grinding on the collaborative knives so the BB’s Swedish steel is the same in both.
