I've enjoyed this knife from Simon Maillet and think someone here will enjoy it too. Simple, clean, classic knife with all the details dialed. White 1 core, XC15 iron cladding, forged taper and tapered tang. Full kasumi finish and ready for stones if you are so inclined. This was originally purchased from Modern Cooking. I am second owner and got it on BST. Smooth cutting and really, really nicely done White 1 core, stable patina. Touches up fast, super crisp. Includes perfectly fit saya. Nice combination.
