I have bought about 14 Japanese knives and a couple German knives over the years ranging from Misono, Masakage, Shiro Kamo, Moritaka, Konosuke, Sakai Takayuki, Ryusen, Sakai Kikumori, Zwilling, and Messermeister.

I have found that I enjoy using the combination of gyuto 210mm and petty 135mm the most. I have a few other styles like nakiri, sujihiki, santoku, but I don’t really use them as much. My favourite steel so far is white #2 for its ease of sharpening and crazy sharp edge.
