Howzit y’all, I’m Andrew G, a brahda from Kauai,Hawaii who moved Utah. I’ve been cooking foe like 12 years now and always loved knives. There are many wonderful Hawaii knife makers, but most make folders or outdoor knives, and not kitchen knives. One guy on the Big Island makes kitchen knives...Hiko Ito knives. ( HIKO ITO). Ken Onion lives on Oahu, and has designed kitchen knives, but most of the knives me makes are folders. Tom Mayo is a dear friend of mine, but he makes mostly folders. Scot Matsuoka is from Kauai, but lives on Oahu. He learned to make knives from Ken Onion, and now designed and makes his own. He largely makes folders. Keith Ouye is another maker who makes mostly folders as well. Most of the knife makers in Hawaii look to the late, great Hawaii knife maker Stan Fujisawa as their mentor. Stan made folding knives almost exclusively. There are other Hawaii based knife makers, but these are the only ones I know.
