I recently acquired this Sabatier K that looks old enough to be an antique rather than vintage. The stamp is deep, and reads "France, Sabatier K, Acier Fondu, Garanti" Does anyone have any idea as to when this thing was made?
The handle is nogent style, solid, and is a little more rugged than your vintage sabatier nogent handles. The blade profile is what I would describe as a 14 3/4" butter knife, and the distal taper is gorgeous. I plan on restoring it - sand and finish the handle, and reprofile the blade to a traditional French sabatier profile.
Does anyone know what style knife this is, and have an example of the most traditional sabatier profile that I could match? Misono Swedish?
