I realized stone testing is a ton easier with a kiridashi. Would love to pick one up, if someone has an extra floating around. Hoping for a simple carbon steel, any flavor, and wrought cladding if possible. Soft iron is cool too.

Budget is about $50, well-used is 100% OK.

Hey Sam, just FYI there are a few wrought Kiridashi that doesn’t break the bank floating around on etsy. I bought mine for $70 aud and it’s quite meaty
The back is a bit funny but it serves the purpose of stone testing

Tiny flat bevel, no convexes, angles, sakimaru tip insanity to try to polish..

Basically a completely understood piece of metal used to grade and judge stones, see what they can do/how they behave in ideal conditions. Usually for polishing power and results.

OP if you want a new one they sell these basic ones at knifewear. The whole thing is kinda warped (mine) so it’s no good for anything but marking. The iron feels softer than normal, moves fast compared to most of my knives. Grain present in the core but only a little in the clad.

Could use kanna as well if you’re looking for wrought clad specifically. Even a noob like me can squeeze some details out.

yes of course the reasoning is clear to me, I would like to try to actually understand if a stone that polishes a lot is necessarily very fine in sharpening rather than having a polishing power it proves not to be fine enough to sharpen. I'd be curious to do some tests, I only sharpen razors I have no experience with knives for now but actually I see that many sellers also test the stones like this; technically, the finer a stone is, the more it should polish, however, it is not said that it is fast or that it has a high cutting power. I mean, I'll get one sooner or later 🤣
