Let me start by saying I don’t typically like ribs that’s are done in the oven - but I need to make 12 racks and smoking them isn’t an option lol.

The few times I’ve done them in the oven it’s like 250° for 3 hours wrapped in foil followed by an hour at 375° with no foil.

So I have 2 options:

1) start on Friday and make 2 sets of 4 racks (my oven can hold 4 at a time - 2 per oven rack) and then 1 Saturday morning before my sons birthday.

2) y’all tell me a faster way to cook them that won’t end up being tough and chewy.

Suggestions?
 
Last time I made ribs I put them in the oven at low heat for a few hours and used the BBQ to finish the glaze....came out perfect and would be my goto scenario for this.
 
Yeah don’t think I have another option, 12-15 hours of oven time coming up I guess.

A double oven is officially added on the necessity side of things in the next house
 
I'm a smoker/charcoal fiend but when you don't have access or time do:

325°F uncovered in oven for about 2 hours if they're meaty ribs. Just season them, no sauce. Then pull them out, sauce them, and finish over charcoal or gas grill for 5-10 minutes to put a little char and set the sauce. In a pinch I've used the broiler this part and it works decently, though nothing beats the hydrocarbon flavor of a grill.

My stepmom has been making them like this for years and they're really quite good, as much as I wanna be a snob about smoking them for hours.
 
Never doing it again in my oven 😂 they came out good! Did 275 for 3.5 hours then 30 minutes at 425 to get them “crispy” (bark?)

Okay, now it's next week. How did it go?

The only problem was trying to stay up all night doing it since I started kinda late and could only do 4 racks at a time. Also reheating was kind of annoying but wasn’t awful. I wrapped them and put all 10 in the oven for an hour or so to heat
 
Glad they worked out. Sorry you had to stay up so much.
