222mm x 56mm Bjorn Birgersson gyuto for sale. Kind of a catch and release as it’s overlapping with a couple of my keepers. Great cutter and really nice edge retention. Felt like the warikomi lives up to its reputation.

What is the steel? Last post says silver steel, does that mean ginsan? Thanks.

I’m not 100% sure what he’s using. It’s not ginsan. It will take a patina so it’s carbon. My understanding was it’s not fully disclosed. If anyone wants to chime in and add more that’s cool with me.

He’s never formally revealed it, but it’s some form of euro carbon and you shouldn’t care because it’s gooooooooooood. Very tough for the extreme geometries he often puts in them, holds an edge well, takes an edge very well, a top of the list HT for me

Dalman suggests it’s 1.2210 here, but he and Birgersson refer to it as “Silversteel” in their listings, so that’s what I call it too.
