Thourght this would be fun to share, i think alot of people will be able to relate to owning too many knives to give all their knives a fair amount of time used and really get to know all their knives or maybe even rediscover some knives that are great. Dont know if its better or worse if you work profesionally.
Im sure many feel this way, i have the same 3-6 knives that i mainly use, and most others see neglect, i thourght it would be fun to force myself to go through my humble collection and see what i think about a week with each knife to force myself to go in depth with their personality, different height weight profiles hardness and so on. Maybe i will have more fun with some knives than i imagined, maybe i will sell or give away something once im done.
so far its been fun already, i just finished my first week with my K-Sabatier - its the 20 cm variant, and have always been a bit neglected as it was softer and shorter than i thourght it would be, so its mostly been used for carving.
During the week i have stropped it on a koppa, fixed the bent tip and at the end of the week i ground down the heel enough that the knife can actually rock now. its a knife that i would not have had so much fun with if i had not forced myself to stick with it for some time. And man the edge might last for a minute, but for that minute its one of the sharpest knives i own for sure. It is also super easy to grind at that low hardness, fixing both the tip and the heel took no time whatsoever, that was a nice change of pace.
Next week is a unknown maker shirogami nakiri. In total i have "17 weeks of knives" i put them all in a list and randomized the list. So i will do this for about 4 months in total, some weeks i have paired two knives, most weeks its one. I have both nice japanese knives, stamped western, stamped chinese "japanese" knives, a petty, a Suji and a slicing-cleaver for this.
Feel free to play along by your own rules if you want, but i doubt i will be able to motivate people to go through a challenge that lasts for several months, i think some in here will be able to go for a full year or more by the principles i set mine up. Also i dont plan to use a knife if the task is completely riducules for the task, i might grab something else there.
