I love Chili Colorado. Aaron Sanchez has an excellent recipe on YouTube. He goes a step further with burritos but his sauce recipe is excellent on it's own.

mine will also become burritos!! I am going to try to make them unique. I am adding diced butternut squash later to bolster the heathy aspect. hahhaha..I think it will work beautifully.

Looks good. What dried peppers did you actually use? It looks like New Mexico red. Do you have recipe?

When it cools off I will be trying this.
