If you're starting out with sharpening, it's much more important to be consistent with your angles and removing the burr.
 
I bought one of those from Jon in 2015 along with an Uraku gyuto (whole different knife and steel). He had me buy gesshin 400-2000-6000 soakers along with the two knives. I always liked the edge I got on that santoku.

Gave the knife to my gfs son in law, I still miss the little guy, it was dead useful.
 
I never know when starting where it will end. Perhaps SG500, SG4k, NP2k. After the first stone, only one or two edge trailing strokes followed by edge leading deburring. IIRC the steel has quite a coarse structure. If I can achieve a burr-free edge with the NP2k — an aggressive 3k according to JIS — that would be my goal.

I sharpen okay though I won't be impressing anyone here with it. I still use an Edge Pro to finish but I thin freehand to keep geometry in check.

This knife was a gift to my mother and I sharpen it for her from time to time. She always says any edge I put on it is amazing and I only use it briefly, so I haven't gotten a feel for how a particular finish does generally or how long it lasts.
 
I took this as opportunity to sharpen the knife entirely freehand. I finished on my only fine bench stone, a Naniwa Hayabusa 4000, which incidentally I find a bit strange feeling. It's not my best edge by a long shot, and a bit too polished, but it will shave above the skin and split a hair 1/3" from the point of hold, so I'm happy, and as expected she is too. It was a lot less to set up than the Edge Pro and I enjoyed the process. I guess I should freehand more often.
