Hey all,

After a couple of back to back traffic accidents I’ve decided to hang up the apron to find something less physically demanding. Gotta keep up with bills while I figure it out and always said I’d only keep one knife if I quit cooking anyways, so I’m listing my remaining knives and stones for sale today.

Most of these are straight from my knife bag and will be sold as is and priced accordingly. These were work knives and I’d love to refinish them for you, but that’s not possible at the moment.

I’m going to apologize in advance for any delays in shipping as my brother will be taking care of that for me while I’m not able to drive. Prices are shipped and insured CONUS.

Victorinox 12” Bread - $25 SOLD!

This has been in my bag for a long time…and I’ve literally used it once. I’ve just never had to deal with crusty bread. I’ll include this only as an add-on with any other purchase (including stones) because of shipping.

Forgecraft 1095 10” Chef’s - $200

245x46mm
199g

I bought this from a member who I think bought it from another member. The steel holds a good edge and takes fine grits well, but I usually finish with an ikarashi or natsuya. It’s a tough knife you don’t need to baby. Great on the line. The saya is Tasmanian blackwood.

Mazaki White #2 270mm Gyuto - $400

276x54mm
338g

This is the 2019 version bought in early 2020 and has been in my regular rotation ever since. Started sanding to finish after maintenance because it’s way quicker (for me). Saya and handle are ironwood.

Bought from JNS awhile ago and never used it. I was going to turn it into a project and just never got around to it.

Wakui Blue #2 240mm Honyaki Gyuto - $450

241x48mm
166g

This is the most recent one listed on JNS (#13). Well used, but well loved and the runner up on what I’m keeping. Holds an edge for a long time and always surprises me when I stretch out another day without touching up.

Shihan 52100 180mm Garasuki - $250 SOLD!

179x44mm
144g

This knife is why I probably have a wanted poster in a chicken coop somewhere. I’ve always liked the shape and think it’s perfect for its purpose, but wanted one double beveled. Tough enough to twist, scrape, go through bones and then be good as new with a couple swipes on a Dick Micro or finishing stone. Will do $425 for both Shihan.

Shihan 52100 150mm Hankotsu - $200 SOLD!

140x28mm
104g

I ordered this at the same time as the garasuki. Aside from frenching this hasn’t seen much butchery. Mostly just when I want a tough petty. The large handle is comfortable enough for me that I’d even reach for it when I shouldn’t for things like peeling in hand. Will do $425 for both Shihan.

Thanks!
