It’s been more than a year since I quit cooking professionally and I still have a lot of gear that is sitting unused, so I’m going to fire sale everything for half or less than what I paid to clear out some much needed space for when the girl and her kid move in. Everything will be sold as is and I will be as transparent as possible with condition. Prices include shipping CONUS.

These were used in a professional setting everyday and were always hand washed. Includes two quenelle spoons.
Nanohone NL-4 - $100 SOLD!
The best flattening stone I have used. I haven’t tried Nanohone’s finer grits as I felt this was all I needed across the spectrum. Extremely fast and hasn’t slowed since day one.
Mac Black Ceramic Rod + F. Dick Dickoron Micro Steel 12” - $80 SOLD!
Selling these as a package. Used intentionally you can keep a blade sharp in a professional environment for weeks without touching a stone, or basically forever at home.
Red Aoto - $125
I had this posted for sale at some point, but it was withdrawn and forgotten about it until I got the ohira back and put it away. 1000-2000 grit, fairly soft and very muddy. Nice for butchery.
Shoubudani Akapin - $250
This was sold previously, but before shipping I discovered some damage to the top of the stone and decided to pull the sale and it has been sitting in storage since. Part of the top broke off with some crumbling texture webbed over the top, I’m not sure what happened. I flattened it a few mm until I got back to a smooth surface and confirmed that the damage was only on the surface. Parts of the varnish on the sides are coming off. Those areas are not damaged and just needs to be resealed. This was my favorite stone for gyuto and gave me that toothy/fine edge that surprised me in longevity every time. Firm stone, but not hard and doesn’t need slurry to get started. Feels 3000-4000.
Ohira Tomae - $200
I gave this to a young cook when I quit, who never ended up using it and gave it back to me later on when he decided cooking wasn’t for him. This is a soft example somewhere around 6000-8000 and as fine as I’d go for kitchen knives.
