I periodically get the urge to pick up a full tang western-handled gyuto.

I was hoping to start this thread so others could post pics of their favorites, and also maybe make some recommendations on makers that are doing these.

Looking for one too, specifically a French Sabatier profiled knife but don't want to deal with NOS, I'm looking at the recent MCX Fredrik Spåre drop, Alex Horn or HSC///.

I like my Jikko VG-10. Probably the biggest drawback is the utter lack of rounding on the choil and spine. Sharpens pretty similarly to X50CrMoV15, hand-engraved logo and pretty good finish.
