This is pretty much a catch and release. I am a huge proponent of the short suji/long petty format in the home kitchen. I have another that is very close in specs that isn't in as nice of condition so this one needs a home. This was my first Ashi and it prompted me to get another (western gyuto) that I'm keeping. I'm surprised these aren't more touted. Received a week or two ago direct from JKI. No surprise that Jon's Gesshin line has fantastic fit and finish. Put a quick edge on it via my translucent Arkansas stone out of the box and sliced up a half dozen boneless chicken breasts on an end grain board, then oiled and put away. Comes in JKI box with a saya (and pin) which is still new in the plastic. 210mm heel to tip, 30mm high at heel, and 130 grams. US sale only and no trades, please.
