Originally purchased from Jon and the great team at JKI, this is a really great small gyuto or large petty, but I find myself reaching for either taller gyutos or shorter pettys now, so I'm making some room for a couple of Gesshin Ginga stainless pettys that should be arriving soon.
The fine grained Swedish stainless (AEB-L?) takes a great edge. The Ginga profile is very thin and light, and Jon's fit and finish specification is really lovely.
It has been used and sharpened. I've done a sandpaper progression on it to blend in any scuff marks from stones near the edge.
I've fully rounded and polished the spine / choil, just for added comfort.
This is quite a useful board knife, and will make someone very happy.
