Gesshin Ittetsu 270 Honyaki Sujihiki White #2.

It comes with octagonal ebony handle with blond-translucent horn ferrule and nice polish.

The knife was used only a few times to cut few slices of prosciutto, few roasts and once to prepare gulash.

Surprisingly little info, but my guess would be Ikeda

I’ve also heard Ikeda for Ittetsu honyaki but that’s not authoritatively sourced. Looks plausible though and gosh dang I wish I hadn’t just bought a bunch of expensive sujihiki.

Man I have 2 of these. Both so sweet. Almost thought about buying it but remembered I already have the 270 . Don’t see a lot of honyaki at this level for this price.
