Hello all!
Since I early retired I've got more time to cook; I'm just an amateur but take it as seriously as I take everything I do. My interest in knives started before my first memories. My mother tells me she had to hide the sharp kitchen knives in a top cupboard where I couldn't get to them and take them outside to 'play with'; I could barely reach the cutlery drawer.
I've been a knife collector (outdoors type mostly) for decades, makes such as Busse, Fallkniven, Bark River, etc. and some customs. For some reason I never really was into kitchen knives before, even though I loved cooking, and was happy(ish) with a set of Globals.
Times change. Running around woods in the wilderness gets harder (plus the UK government sees knives and users as evil now), and staying home cooking becomes more attractive. So... my interest in knives is moving to kitchen knives. Something I can still use.
So far, I've bought a Shing 20cm kitchen knife in niolox+ steel. Needs some serious sharpening to be up to my standard but the handle fits me like it was custom made and it wasn't expensive.
