Looks like 240mm sujihiki are the least popular knives on here (but maybe my favorite to use) so lemme throw some more out there.

Kemadi monosteel bulat 227x51
Probably the best steel I’ve ever used. Doesn‘t stain readily, takes a wicked sharp bitey edge easily, retains it longer than AS or R2, and the bevel doesn’t seem to be getting any higher from the few sharpenings it’s had. I never reach for the heavy ones anymore though (227g) so here it is. The bevels may look a little concave from the choil shot but I’ve checked with a straightedge and they are convex. $450

Heiji tall suji/gyutohiki, 242x40. Carbon, Iwasaki/spicy white. It was a custom order for someone else, not something that’s usually available. Bevels are flat and take polish well, but for whatever reason it’s gotten very little use. $300

OUL before it was Hado, Yamatsuka ginsan which is definitely my favorite treatment of it. 225x44. Got it from labor of love, he used it a lot and put some great geometry on it. Excellent line knife for a grill station or for a chef; I have the same shape and size in a carbon non-wide bevel and decided I like that better. $200

Shibata Kashima R2, 243x47. My favorite of the KS pattern/clone knives, more so than the KS itself. Also was my favorite laser, over all the classical ones, tied with Goko Kogetsu but stainless. I don’t really use a gyuto this size these days and have switched to Asano as my light middleweight for laser duties. $200

Shiro Kunimitsu 192x45 bunka
Love the white 1, definitely one of the best implementations of it and behaves much more like blue. Bevels are about halfway flat but didnt start out very concave anyway, I don’t think I’ve used below a 3k on this. Also the narrow bevel looks like it’ll wedge and split but it doesn’t; the forged geometry is pretty darn nice. I wanted to try this shop out with something beyond a gyuto or suji but it turns out I’m just not a bunka guy. $200

For my next knife purchase in the distant future, I will need an instagram account as it seems (or keep watching BST)

His wood choices are really nice too.
The last one here on BST was turkish walnut.
This one looks just as nice.
What kind of wood is it?
