I have been reading through for a few days. I am a backyard cook. Always grilling or smoking something. As I have a few smokers and grills. I lack kitchen knives beside from a set of Wusthof that I have built up. I recently ordered the Almazan knife. If nothing more for show and conversation. Interested in a few Japanese knives and been heavily researching stylus and makers.
