I came across this site while looking into sharpening gear. Seems to be a lot of people here into the same thing!
I cooked professionally for three decades before low vision forced me into retirement.
I've been out of the commercial kitchen for a while now, but I still cook daily for myself, and still like my knives razor sharp. All of my experience to date has been with Arkansas stones, DMT products and of course ye olde double sided grey rough 'n' rougher stones. I look forward to learning more about all the other options available.
