Hello,
I caught the bug. I’ve known the value in a quality knife since I was a teenager. Bought my first German swilling 8” chefs at 16. Been using Shuns for the last 4 years and have just gotten into real forged J knives a month ago. Now I’m working on building my collection. Would love to acquire a Shig and a Kato. Currently have a Nigara and a Takeda. I really like what Yoshizawa-San is doing over there.
