Hello, everyone.I'm a chef from Mexico, who introduced himself on this forum a few years ago, actually several years ago, and for that same reason, I think that re-introducing myself is the correct thing to do. Although I tend to lurk more than actively participate, I truly appreciate the knowledge and conversations shared in this nice community.
Recently, I moved to Dubai, committing to the principle of a fresh start. I packed my life into a single suitcase, leaving behind my cherished knives in Tequila & Burrito Land. Among the ones I miss are my good ol' Konosuke HD, the almighty Gesshin Ginga gyuto, the stinky/stained and sometimes rusty Masamoto, and CCK chinese cleaver. Now, I find myself sad and in need of good quality piece cutlery. Seems like my idea of a "Fresh start" and "Life in a single suitcase" makes a great Instagram title but in real life is one of the stupidest things that I've ever done. I mean how much weight and space a couple of knives take in your luggage?
In search of a good knife, I've encountered stores like "Williams Sonoma" here, with their typically overpriced and overrated Globals, Shuns, and Wusthofs. None of these appeal to me. However, before I resort to ordering a Japanese blade online, I'm curious about local options. Considering the Middle East's history of producing formidable Damascus steel and the respected cimeters and daggers once used against Crusaders, I'm confident there are hidden cutlery treasures here.
So, in the hopes of acquiring a quality chef knife native to this region, I'm awaiting your suggestions. If you're aware of any local brands or, even better, know of a reputable cutlery store in Dubai, I would be grateful for your recommendations. I'm not in search of a fancy ten-thousand layers Damascus blade with a precious wood handle in a sheik-worthy golden sheat, I want a good performer where good blade geometry and good edge retention are king.
