Hello! Recently become very active again in the knife community and am ready to fall down the rabbit hole. Currently I am looking to replace my gyuto with a Carbon or Clad LW/Laser like the JKI ikazuchi. If anyone has any recs that are under $200 new or used i would love to hear your thoughts. Going to use it as my new daily driver, I cut 80% veggies and 20% meat. If you have any other suggestions or are looking to sell let me know!
