Hi everyone, greetings from the Chesapeake Bay. I've been lurking for a while and soaking up all the great knowledge here. I just got my first legit Japanese chef's knife - a Yoshikane SLD -and am looking forward to learning how to give it the respect, love, and care it deserves while continuing to build a collection for my kitchen.
