Happy to be a new member of this community! During my university years I worked part time as a wok chef in Chinese restaurants and takeaway shops where I predominately used Chinese cleavers and a variety of Kiwi brand stainless steel knives - which will forever have a place in my heart.
My days as a chef are in the past but I've always retained an interest in knives. I find myself watching knife restoration and blacksmithing videos on youtube and I hope to one day forge my own demascus pattern knife. When this happens I'll be sure to post the final product here - there are a few weekend courses available here in Australia.
I bought my first Japanese knife in the middle of COVID lockdowns, it was a Seisuke AUS10 Damascus 210 Gyuto which admittedly I didn't do much research on and just bought purely based on look and affordability.
I recently stumbled across this forum while looking for recommendations for which shops to visit during my trip to Japan and went down a rabbit hole of information. I was fortunate enough to line up a visit with Takada no Hamono and purchased a Shingetu White #1 210 Gyuto which I absolutely LOVE, to me his knives are a perfect balance of beauty and performance.
I'm keen to expand my collection and dive deeper in the information available here.
