My name is Matt and I am a home cook. Was never into buying myself nice things until a buddy of mine got me a nakiri as a gift. I cut myself almost immediately (due in part to that buddy’s sick fascination with making a sharp knife Very Sharp) but I was hooked. It’s a different experience, a real step up in the home kitchen over some dull hand me downs.

The more I dig into this world the more I see there is to learn and see. Here’s to more learning and seeing in 2024!

Do you have any shape of knives you find of interest while you are still new? When I started I was super into USUBAS and YANAGIBA/TAKOBIKI knife shapes.

I am still so new I am just starting to keep the shapes straight. I like when there’s a twist on an established shape. I love a santoku with the upturned tip. I am really into the short “dorito” gyutos. I like when there’s a personal or custom touch to shake things up.

Sounds like a Kurouchi Mazaki would be all up your alley. Especially his old dorito profile.
 
Welcome! I live in North Florida also. Don’t worry about your present love for santokus. You will grow out of it. It’s just a phase, you will be fine.

It's only after cutting yourself that a knife has become yours. To me it happens only once with a knew knife.
