Hello from South Carolina! // Japanese Knife Identification or Intel

Hello all! I've been starting to get into nicer knives. In my mid 30's. I don't really know where to start.

I've followed this bartender at Bar Centifolia in Japan. I've always been intrigued by his equipment, particularly these two knives with the green handles. I did my best to find good photos of them. Would anyone have any intel where I could learn more about them? Thank you so much!
