I’m new here and interested in learning restoration and sharpening. I am also building a collection of Zwilling knives (an upgrade from my longtime set of... Chicago Cutlery).

You will find much sharpening expertise on the forums.

Many on the forums are interested in Japanese style knives, which they see as better performers than Western Stainless knives.

Nonetheless, the sharpening skills are still applicable to sharpening Western Stainless knives.
