I am from Spain, a country with some knife heritage, of sorts. Nevertheless, I went through the rabbit hole of knives and stones just recently. I have Arcos Spanish knives, as well as a couple of japanese ones (Ittestu Garasuki and Shiro Kamo Sujihiki), as well as some Naniwa stones.
