I have a Gesshin Ginga #6 Cleaver in Swedish steel which I absolutely love in terms of cutting, but which I find just a bit too big and cumbersome for daily tasks. I have a few other vegetable cleavers / nakiris, ranging from 180-210, and generally I prefer things in the ~200mm range in terms of size. Tall nakiris or other small cleavers in the 185 range just feel too stumpy for me.
My favourite profile is the Sentan which has a little bit of belly and is very pleasing to use. But ultimately the Gesshin blows it out of the water in terms of cutting performance, which you might expect based on the price difference. Some of this is likely also due to a weight difference, but even when use the Gesshin for sideways slicing it just breezes through things.
Are there any moderately high-end cleavers (including cai dao, chuka bocho, or tall nakiris with a non-rounded tip) in the 200-210mm range that can compete with the Gesshin Ginga? My budget is fairly generous, up to $500 or so, and either US or EU/UK sources are fine (ideally in-stock).
