Hello from British Columbia. I'm new to this knife world as I was given my Hitohira Futana Santoku as a gift from a friend recently. I dove in head first and bought a couple more knives last week: a yoshikana SKD gyuto and a Tsunehisa AS Nakiri. I love to cook and spend quite a bit of time in the kitchen but have only ever had cheap knives.
Fortunately, I live close by a couple nice knife shops and have a sharpening class scheduled.
