I've bought two UU Shuns as gifts for family not especially interested in cooking knives--and they love them. For myself I got the Tojiro flash version as a sandwich knife that can take on most anything. It's a good way to start to learn how to use single bevel knives, since it only as an edge on one side.
 
Anyway, even honing of the outer edge should be fine … by the time the top of the scallops contact the food the cut has been well established anyway by the slicing movement. Nobody is push cutting with that thing.
 
Ok, plan B, keep it in the honey jar. If you squint it kind of looks like this
