Hello, I’ve been perusing the forum for a bit now and think I might have a question or two.

About me, I have couple dozen knives from victorianox fibrex to single bevel Japanese Deba. I use a half dozen for work and the rest for home. I am always looking to get a new single purpose knife or upgrade a current blade. And I made my own modular magnetic knife rack.

Here is the knife rack. I need a much longer wall, it is a bit crowded. Like really crowded lol.

Cool!, but do you have a secret code based on which you choose the skillet when cooking? :p
Ha! Sort of. For searing I like to use the biggest pan I can without being extreme overkill. More mass equals more heat retention and more hot spots to sear with. As I put more pans down I get smaller to keep the flame in the Center. Then height comes into play when I start stacking pans across two pans.
