I shop at a grocery store. It’s on the boogjy side. The meat dept is full of talent.

I’m making Taiwanese Beef Noodle Soup tonight. While the store is limited, (example) I’ll never find banana shank meat since the cross-cut everything OssoBucco style. I just bought the garden variety of beef shank cut for my soup. Not ideal, but passable. I asked about beef bones, “do you have any shaggy, tendony bones?” He said not usually since the clients never ask for any. But he went back to look. He came back with a beautiful bone! I asked him to cut me one end and I’m golden! All the ladies around me were asking me my plans. Haha.

Grocery stores that still have an actual butcher... that's an incredible rarity here. All you'll find here is prepackaged stuff, even in the biggest stores.
Even plenty of butchery stores are basically just a retail outlet that moves prepackaged stuff.
