I inherited a few Japanese knives recently and while I've been happy to use them and avoid slicing my knuckles off, I realized I don't know much about them.
Any Kanji readers out there who may be of assistance? I'm pretty sure they were purchased in Kyoto at one of the smaller shops. Would love to know more about their origin and steel composition if anyone is familiar with the maker.
Any ideas?
