This Tadafusa was the first J-knife I owned and it was a huge step up from anything I’d previously used despite being initially pretty thick BTE. I’ve since practiced thinning bevels, polishing and rounding chocks/spines on it, and now it’s got kind of a shiny migaki on the hira and a kasumi on the kireha. It’s one of the rare integrals that has a forward balance at the pinch grip and would be a great workhorse, beater or first J-knife.

This Shirasagi was an impulse buy. I wanted to try a single bevel knife and was excited because I’d heard these were forged by the maker of tetsujin and sharpened by Tateo Myojin - but ended up not enjoying it. I used it twice to break down fish and once just in meal prep but personally enjoyed using a petty and normal gyuto more for both tasks. I’ve polished off the patina and put on a kasumi but there are still some scratches on the ura from when I first tried sharpening with it. Maybe it’ll be more to someone else’s tastes.

Ugh where do I begin with this one. I think I had too much hubris. Like a girl who thought she could fix him -.-. Got this from a KKF member and didn’t inquire enough. On arrival the blade had a pretty bad curve towards the right, and because thinning was likely attempted while it had this curve, it had a really wonky grind, and was overground at the tip on one side. The cladding was also very close to the core steel, and it got even closer as I tried to fix some recurve. I’ve tried to straighten it out a but it’s still got slight a curve at the tip. I also ground down the hakata hump at some point but I may have been drunk so I don’t remember much. I have attempted multiple times to fix the grind, polish, and etch but I’ve kind of run up against it mentally. Not even getting started with all the little pitting that is along the lamination, but I knew about that before buying. Maybe someone else more skilled can make it work 😅

^its hard to tell but the tip part isn’t in line with the rest of the blade.

Ohhhh, I like the specs on that…. I’m curious now. Been using a 180 mukimono as a line knife at a Thai restaurant (aka doing tomatoes, cucumbers, and mangoes on expo/guarde station) and it is a fun place to have a single bevel. Having a bit more length and height would be really cool.
