new forum member saying hello! Over the last two years I’ve transitioned from hand me down 25 piece knife sets to chef/pairing/serrated combo, to the victorinox chef knife, got some shapton stones to go with my diamond plates (mainly for woodworking), and am now starting to add some nicer Japanese knifes into the mix. I started with a yuki nakiri a few months ago and am eager to build up a small set of nicer knives. Been lurking for a while, thought I should finally sign up. Hello!
