Hello,

I am looking to purchase a single bevel design kiritsuke. I am looking for advice on where to look for a quality knife.

I have been looking at San Mai construction but I am not limited to this. The number of knives available is dizzying to say the least.

I mainly am interested in some advice on makers or brands. I have professional kitchen experience, but I no longer work in the industry. Thanks for your time.

Korin's Suisin selection hits various price points in white and blue steel. I was quite happy with the Saika a few years ago but didn't use it enough to justify having it.
 
I find Masamoto's Honyaki White 2 Kiritsuke is quite nice, ura stays dead straight and I felt the steel is well tightened when I sharpened it.
