Any one noticed this new book (pub. Jan 2023) on kitchen knives? The author is P.R. Torres. I picked it up off Amazon Sunday, delivered Monday. 792 pages! Fairly large print and mostly line drawing with a few photos. I've only read a few opening pages so I really can't pass judgment yet.
