Knife types vs varius foods

Please list the foods you most commonly cut (preferably in groups, like hard, soft, acidic, etc) and how well each of your knives/knife types deal with them.
For example, when would you grab (one of) your laser(s) instead of (one of) your workhorse(s)? :knife:
 
I tried once. Did not end well.

But to give you a few extremes:

Good luck slicing raw lotus root with anything but a laser or a kiwi. That stuff is worse than raw sweet potatoes.

Carbon steel and limes simply do not mix well.

Hot food (as in too hot to firmly touch) - I do not care if it is superstition, I reach for a beater.

Elastic-flesh fruit like plums, mango, peaches - always has me reach for something thin but single edged.
