Up for sale is a knot handcrafted gyuto in my favorite steel, 52100 monosteel. It is a laser with convexity. Flys through everything, light and nimble. Sports a beautiful handle and a vibrant patina that I can remove per buyers request, but I happen to think it looks great. It has a blade length of 235mm. And even though a laser, it has a great taper and gets really thin at the tip. Polished spine and choil.
