A beautiful Yoshikane SLD Black Damascus Gyuto 240mm from CarbonKnifeCo for $660.

Cleaning out drawer, and I reached for Shihan more often.

The knife has been used once on Mirepoix, and potatoes, an amazing cutter. I have not use it ever since. The spine has been polished, it's very comfortable, the choil, that's up to you if you want to polish or leave as is.
