Simon Maillet 230x54 223gr Shirogami #1 with XC15 Cladding (I believe) full tapered tang
- This one hurts, ive had this knife for a while now and got it from a well known member here. Originally a modern cooking drop. Oak Handle with matching saya. Really fell in love with this knife, really nice size and has a robust feeling on board. Really fun to sharpen, this steel gets crazy sharp. In some conversations with Simon I found out this knife was not finished on stones, however I have used a natural koppa to reset the patina a few times and the bevels are pretty close, was always good enough for me. One thing to note is when I did have it on the koppa I got a little sloppy and my angle near the tip on the left side came off the bevel and so I polished the cladding a bit which makes it appear that the bevel on that side is larger. I think it's pretty negligible but wanted to be clear in the listing. Asking $420

-Got this knife a while back in a trade and it's really a sleeper imo for the price. F&F is really great, handle is gorgeous.The KU is pretty unique to many ive seen and also really nice. Definitely a workhorse but I was really impressed with how well it cut and the steel felt great. Has potential to be a really cool polishing project if someone is inclined. Asking $285
