Hi everyone,
I only want to sell these as a set. Please, no trades ( Too many knives, not enough funds for school ).
I have a set of 2 ApexUltra core, wrought iron clad, KU finish, with walnut handles (230x60 gyuto, 180x45 petty). They arrived on Jun 6th. They were not sharp on arrival, so I sharpened them, once. I've used them both a couple of times (2 dinners), but the petty I've used a little more often as that is my go to for pretty much anything that's not going to be a full meal (used less than 4 days). I have the original boxes, paperwork, everything down to the chopsticks and original photo's from Simon during updates. There's nothing wrong with these, I just don't have the time I previously did and have more knives then I can cook with and maintain, and these are practically new. Very slight patina. I switched to the KU finish after I started to realize I was running low on time to maintain knives and started to worry about rust, but it can always be cleaned off if that's what you prefer. This was after the wait when Simon reached out saying he was starting on the order. These have been sitting in their boxes after week 1, as I've not had time to list them.
Cost to my door was just over $1200, willing to let go for $900 plus shipping/insurance. Most specs are included in the photos of the write-up Simon did, but if you need more info on anything, feel free to reach out.
Please excuse my horrible pics, I'm not a photographer at all.
Pics, I took today to verify condition.
Gyuto
Petty
Pics, I took back in June, still after I'd stopped using them.
Petty: 180mm edge, ~194mm to handle, 5.5mm at handle .8mm roughly 1cm away from tip. imgur_pics
Gyuto: 230mm edge, ~245mm to handle, 5.3mm at handle .8mm roughly 1cm away from tip. imgur_pics
