For sale 240 gyuto from Dave Martell.
Steel 52100 carbon steel.
Edge lenght 239mm
Heel height 56-57mm
Weight 238g
Knives and Stones handle
Comes with padded knifecase.
I would like to have 350$ shipped to Eu and 375$ shipped to elsewhere.

I've used it in a few meal preps, a little patina showing up. I havent sharpen or touchup, edge is as sharp as when I got it from Dave. It is a very good cutter with beautiful handle.

I have a new ones coming in and decide to keep only one gyuto with 52100 steel and so this Martell is looking for a new home.

Bump,

320$ to EU, 340$ elsewhere. Includes shipping with tracking.

Open to trades too. Mainly interest in taller and hevier blades.
 
Just like marc4pt0 put it, a good allrounder.
The spine comes 2,54mm out of the handle and goes nearly the same up till 3cm before the tip and tapers douwn to 0,86mm 10mm before the tip. I cut with it yesterday again and it did real good, no noticable wedging, goes supricingly good thru onions and potatoes, edge is sharp as you could expect from Dave.

This is my one of my first knives that I got after jumping in the rabbithole. It just doesnt get used that much so letting this one go too. The performance is there and if you like ebony handle, this Martell is a solid choice.
 
Agreed on thin workhorse. I dont care for anything thinner, besides maybe a ginga paring knife.

This is an insane price for a great knife. I don't get it, if I didn't have one very similar I would get it.

Good steel and heat treat, check. Good profile and grind, check. Amazing price, what gives?
 
Yes, no more price dropping and if this is still here sunday, I keep it myself.
